Hey guys! I’ve been working the whole morning and now I’m sitting here talking with my manger. So many plans for March!! Yesterday I went with Oscars parents to an apartment in the city that our designer had designed to get some ideas for our own apartment, Oscar couldn’t come because he had to study so I had to film everything for him haha.. Anyway after that I had a coffee with his parents and after that I went home. I made this smoothie the other day and you guys have to try it!! Sooo delicious, I’m definitely going to do it again. Anyway now I’m going to Barcelona city now..Love, N ♥

SILOÉ CORNELLA

Ok so me and Oscar has just found our favourite restaurant in Cornellá (close to Barcelona)..and it’s vegetarian! They also have many vegan options like the ones above. So freaking delicious! We have decided to go there once every week to eat lunch and we planed to go there tomorrow. Their lunch menu has a very good price, 3 plates for 11€..I took hummus with veggies, soya beefs and potatoes and for desert strawberries. Today I’m going to the apartment  to take some final decisions so I have to hurry up now because I’m meeting up with Oscars parents. Love, N

Okej jag och Oscar har hittat våran favorit resturang här i Cornellá (nära Barcelona)..och det är en vegetarisk resturang! Men de har även många veganska rätter som på bilden i inlägget. Vi har bestämt oss för att gå dit en gång i vecka, så imorgon ska vi dit igen. Deras lunch meny har ett väldigt bra pris, 3 tallrikar för 11€. Jag tog hummus och grönsaker som starträtt och efter det sojabiff med potatis och till efterrätt jordgubbar. Idag ska vi till lägenheten för att ta lite beslut så måste skynda mig, ska strax möta upp Oscars föräldrar. Love, N

HEALTHY RECIPE – PANCAKES

Recipe (for 2 persons): 3 eggs, 2 bananas, Blueberry powder (I use this), 1 t cinnamon, 1 T shredded coconut. Topping: Sesam seed, raspberries, grapes, jam without sugar, cinnamon and a then crush a half cookie.

This morning I made pancakes for me and Oscar..So delicious! This is definitely one of my favourite recipes when it comes to breakfast and Oscar loves it as well. Normally I don’t eat it with crushed cookies but we felt like cheating a bit today. You can just skip the cookies and it will be a healthy recipe hehe. I’m thinking about going to London for some days in February..I’ve wanted to go there for a while now. Oscar is very busy this month so I will ask one of my friends. I will need some great London tips from you guys if I’m going! Been there one time before back in 2009 and I really liked it! Love, N

I morse gjorde jag pannkakor till mig och Oscar..Så himla gott! Detta är definitivt en av mina favoritrecept när det kommer till frukost och Oscar älskar pannkakor också. Vanligtvis äter vi det inte med krossade kakor men vi kände för det idag! Om du vill ha ett mer nyttigt recept så kan du skippa kakorna. Jag har tänkt att åka till London ett par dagar nu i februari, har velat åka dit ett tag nu. Oscar är upptagen hela månaden så jag får kolla om någon av mina vänner kan. Lär behöva ett par bra Londontips från er lite senare..Jag har varit där en gång innan, tror det var 2009 med min familj och då gjorde vi alla turistsaker hehe. Love, N

HEALTHY VEGAN BOWL

So here comes a delicious recipe that goes quite fast to make! Perfect for a lunch box, or if you want to make something fast and healthy (ok minus the chick pease but you can always skip that). After seeing the documentary Cowspiracy I’ve tried to eat vegan at least 4 times every week. It’s really hard since I’m not used to these kind of recipes, but I’m getting there hehe.

How to make your vegan bowl:

1. Start by preparing the day before, put the chick pease in water (it has to be in the water for around 10 hours).  I just put it in water before I go to sleep. Then it has to boil for around 40-50 minutes. So I always start with this because it takes time.

2. After that I boil the quinoa, I don’t know how long i boil it but I guess around 20 min. I just keep on tasting it while cooking because I don’t want it to soft. I mix the quinoa in tomato sauce to give it a bit more taste.

3. Then fry the mushrooms, carrots and broccoli in coconut oil (add salt, pepper and a biiiit oregano and barbecue spice and honey).

4. Prepare the salad (it’s under everything you can’t see it). But I used baby spinach, salad and rucola to get different flavours.

5. 1/2 avocado per person and some corn.

6. Topping: Oscar got vegan mayonnaise (I didn’t know it existed and it was so much more delicious!!) and I had hummus. And the both of us had vinegar and olive oil as well.

 

This was so delicious and Oscar loved it as well. We ate it again yesterday since I boiled a lot of chick pease. I recommend this meal because you get really full, it’s filled healthy things that the body need -and it’s tastes so good!! Love, N ♥

HEALTHY SMOOTHIE

This winter I’ve made a lot of smoothies, I’ve experimented with different fruits, vegetables, spices and so on but this one turned out being my favourite! I don’t know why but it tastes like a really good dessert so it’s perfect when you feel for something sweet. I normally have this as a afternoon snack or when I’ve been in the gym. I always make my recipe for two persons since Oscar loves my smoothies as well hehe..So this recipe is for 2 persons. Den här vintern har jag verkligen experimenterat med olika frukter, grönsaker, kryddor osv, men den här smoothien blev verkligen en favorit hos mig! Den smakar som en riktigt god efterrätt, så helt perfekt när man känner för något sött. Jag brukar oftast göra den på eftermiddagen eller när jag kommit hem från träningen. Jag gör alltid mitt recept för två personer då Oscar är ett stort fan av mina smoothies hehe.
